Ingredients:
- 2 oz cream cheese
- 2 1/2 cups mozzarella
- 2 eggs (1 for egg wash)
- 1 1/2 cups almond flour
- 1 tbsp baking powder
- Shredded cheddar cheese
- Jalapeños (optional)
- Salt

Instructions:
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- In a large microwave-safe bowl, combine the cream cheese and mozzarella. Microwave for 1 minute, then stir, and microwave for an additional minute until melted and well combined.
- Add one egg, almond flour, and baking powder to the melted cheese mixture. Mix until a dough forms.
- Divide the dough evenly into 6 portions and shape them into balls. Place them on a baking sheet lined with parchment paper.
- In a small bowl, beat the remaining egg and brush it over the top of each dough ball.
- Sprinkle shredded cheddar cheese over the top of each dough ball. You can also add jalapeños for extra flavor if desired.
- Season the dough balls with salt according to your taste.
- Bake in the preheated oven for 12 to 15 minutes, or until the bread is golden brown and cooked through. Adjust the baking time if needed based on your altitude.
