Keto Cheesecake Cups..
..closest thing I’ll be getting to an ice-cream
No base Cheesecake cups
2 cups cream cheese (room temperature)
2 tsp vanilla extract
1 cup heavy cream
1 tsp liquid keto friendly sweetener
1 tablespoon gelatin powder
Melt gelatin.. as per packet instructions
Let it cook but ensure it remains liquid
Using a hand mixer, mix cream cheese, sweetner and vanilla extract.
Add runny gelatin
Mix using a spatula
In another bowl, whip cream until stiff peaks
Mix in the cream cheese mixture into the whipped cream and mix using a spatula.
Dish and refrigerate for at least 2 hours.
I used a piping bag to make it look pretty.
