KETO CHEESY GARLIC “BREAD” RECIPE
Ingredients:
- 1 large head of cauliflower
- 2 large eggs
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1/2 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray or parchment paper
Instructions:
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
- Rinse the cauliflower and cut it into small florets. Pulse the florets in a food processor until they resemble rice-like grains.
- Place the cauliflower “rice” in a microwave-safe bowl and microwave on high for 5 minutes. Let it cool for a few minutes.
- Using a clean dishcloth or cheesecloth, squeeze out as much moisture as possible from the cooked cauliflower.
- In a large mixing bowl, combine the drained cauliflower, eggs, minced garlic, 1 cup of mozzarella cheese, Parmesan cheese, chopped parsley, dried oregano, garlic powder, salt, and black pepper. Mix well until everything is evenly combined.
- Transfer the mixture onto the prepared baking sheet and shape it into a rectangular “bread” about 1/2-inch thick.
- Bake the “bread” in the preheated oven for 20-25 minutes or until the edges are golden and the top is set.
- Sprinkle the remaining 1/2 cup of shredded mozzarella cheese on top of the baked “bread” and return it to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
- Remove the Keto Cheesy Garlic “Bread” from the oven and let it cool slightly before slicing and serving.
