KETO CHEESY GARLIC “BREAD” RECIPE

Ingredients:

  • 1 large head of cauliflower
  • 2 large eggs
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray or parchment paper

Instructions:

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Rinse the cauliflower and cut it into small florets. Pulse the florets in a food processor until they resemble rice-like grains.
  3. Place the cauliflower “rice” in a microwave-safe bowl and microwave on high for 5 minutes. Let it cool for a few minutes.
  4. Using a clean dishcloth or cheesecloth, squeeze out as much moisture as possible from the cooked cauliflower.
  5. In a large mixing bowl, combine the drained cauliflower, eggs, minced garlic, 1 cup of mozzarella cheese, Parmesan cheese, chopped parsley, dried oregano, garlic powder, salt, and black pepper. Mix well until everything is evenly combined.
  6. Transfer the mixture onto the prepared baking sheet and shape it into a rectangular “bread” about 1/2-inch thick.
  7. Bake the “bread” in the preheated oven for 20-25 minutes or until the edges are golden and the top is set.
  8. Sprinkle the remaining 1/2 cup of shredded mozzarella cheese on top of the baked “bread” and return it to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
  9. Remove the Keto Cheesy Garlic “Bread” from the oven and let it cool slightly before slicing and serving.
