Ingredients:
For the Biscuits:
- 2 large eggs
- 2 tablespoons of cottage cheese or sour cream
- 2 tablespoons of melted butter
- 1 cup almond flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon pink salt (or any salt of your choice)
- 1 cup shredded cheddar cheese

For the Glaze:
- 2 tablespoons of melted butter
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried parsley
- 1/8 teaspoon pink salt (or any salt of your choice)
Instructions:
- Preheat your oven or air fryer to 400°F (200°C) and line a cookie sheet with parchment paper.
- Making the Biscuits:
- In a small bowl, whisk together the eggs, cottage cheese (or sour cream), and melted butter. Set this mixture aside.
- In a separate, larger bowl, whisk together the almond flour, baking powder, and salt.
- Combine the wet mixture from the smaller bowl with the dry mix, and then add the shredded cheddar cheese. Stir until all the ingredients are well combined.
- Spoon dollops of this prepared batter onto the lined cookie sheet, making each biscuit about 2-3 tablespoons in size. Leave some space between them.
- Bake the biscuits for 12-15 minutes in the preheated oven or air fryer until they turn golden brown.
- Making the Glaze:
- In a bowl, combine the melted butter, garlic powder, dried parsley, and salt. Mix well.
