Keto Cheesy Garlic & Parsley Biscuits

These biscuits are not only keto-friendly but also packed with savory flavors, making them a delightful treat for those on a low-carb diet. Enjoy these delicious, cheesy, and garlicky biscuits!

Ingredients:

For the Biscuits:

  • 2 large eggs
  • 2 tablespoons of cottage cheese or sour cream
  • 2 tablespoons of melted butter
  • 1 cup almond flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon pink salt (or any salt of your choice)
  • 1 cup shredded cheddar cheese

For the Glaze:

  • 2 tablespoons of melted butter
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried parsley
  • 1/8 teaspoon pink salt (or any salt of your choice)

Instructions:

  1. Preheat your oven or air fryer to 400°F (200°C) and line a cookie sheet with parchment paper.
  2. Making the Biscuits:
    • In a small bowl, whisk together the eggs, cottage cheese (or sour cream), and melted butter. Set this mixture aside.
    • In a separate, larger bowl, whisk together the almond flour, baking powder, and salt.
    • Combine the wet mixture from the smaller bowl with the dry mix, and then add the shredded cheddar cheese. Stir until all the ingredients are well combined.
  3. Spoon dollops of this prepared batter onto the lined cookie sheet, making each biscuit about 2-3 tablespoons in size. Leave some space between them.
  4. Bake the biscuits for 12-15 minutes in the preheated oven or air fryer until they turn golden brown.
  5. Making the Glaze:
    • In a bowl, combine the melted butter, garlic powder, dried parsley, and salt. Mix well.
