Here’s a detailed keto recipe for chicken Alfredo:

Ingredients:

For the Alfredo Sauce:

  • 2 tablespoons of butter
  • 2 cloves of garlic, crushed
  • 2 ounces of cream cheese
  • 1 1/2 cups of heavy cream
  • 1/2 cup of shredded Parmesan cheese
  • 1/2 teaspoon of pepper
  • 1/4 teaspoon of nutmeg
  • Salt to taste

For the Keto Chicken:

  • 32 ounces of chicken breast, cut into small cubes
  • 1 teaspoon of onion powder
  • 1 teaspoon of garlic powder
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 1 tablespoon of olive oil
  • 12 ounces of shredded mozzarella cheese
  • 14 ounces of cauliflower or broccoli (frozen works fine)

Instructions:

  1. Prepare the Alfredo Sauce:
    • Place a medium-sized saucepan over medium heat.
    • Add the butter and crushed garlic, sauté for about 2 minutes until fragrant.
    • Add the cream cheese to the pan, allowing it to melt.
    • Pour in the heavy cream and bring the mixture to a slow simmer.
    • While whisking continuously, slowly add the shredded Parmesan cheese to the pan.
    • Let the sauce simmer for about 10 minutes to thicken, then season with salt and nutmeg to taste.
  2. Prepare the Keto Chicken:
    • Preheat the oven to 350°F (175°C).
    • Season the chicken cubes with onion powder, garlic powder, salt, and pepper.
    • Heat olive oil in a skillet over medium-high heat.
    • Add the seasoned chicken to the skillet and cook until browned on all sides.
    • While the chicken is cooking, steam the cauliflower or broccoli until just tender, then pat dry with a paper towel.
  3. Assemble and Bake:
    • Spray a baking dish with non-stick spray.
    • In the prepared baking dish, layer the Alfredo sauce, cooked chicken, steamed cauliflower or broccoli, and shredded mozzarella cheese.
    • Repeat the layers for a second time.
    • Place the baking dish in the preheated oven and bake for about 30 minutes, or until the cheese is bubbly and golden brown on top.
    • Once baked, let it cool for a few minutes before serving
