Keto Chicken and Cauliflower Rice Recipe:

Ingredients:

  • 2 boneless, skinless chicken breasts, diced
  • 1 medium head of cauliflower, grated or riced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 cup broccoli florets, chopped
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 1/4 cup chicken broth
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced chicken breasts and season with salt, pepper, paprika, and cumin. Cook until the chicken is browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic, diced onion, diced bell pepper, and chopped broccoli. Sauté until the vegetables are tender, about 5-6 minutes.
  3. Add the grated cauliflower rice to the skillet with the vegetables. Stir well to combine.
  4. Pour the chicken broth and lemon juice over the cauliflower rice mixture. Stir again, scraping up any browned bits from the bottom of the skillet.
  5. Return the cooked chicken to the skillet, mixing it with the cauliflower rice and vegetables. Cook for an additional 2-3 minutes to heat everything through.
  6. Taste and adjust seasoning with salt and pepper if needed.
  7. Once everything is heated through and well combined, remove the skillet from the heat.
  8. Garnish with freshly chopped parsley before serving.
