Keto Chocolate Peanut Butter Balls

Ingredients:

For the balls:

  • 1 cup all-natural peanut butter (no sugar added)
  • 6 tablespoons butter, softened
  • 3/4 cup powdered Swerve (you can adjust to taste)
  • 2 tablespoons vanilla extract (optional, for extra flavor)

For the coating:

  • 2 cups Lily’s chocolate chips
  • 2 tablespoons coconut oil

Instructions:

  1. In a mixing bowl, combine the peanut butter, softened butter, powdered Swerve, and vanilla extract (if using). Mix well until everything is thoroughly combined. The mixture should be thick and easily moldable.
  2. Scoop out portions of the mixture and roll them into small balls, about 1 inch in diameter. Place the balls on a baking sheet lined with parchment paper or a silicone mat.
  3. Once all the balls are rolled, place the baking sheet in the refrigerator to chill for about 30 minutes to firm up the balls.
  4. While the peanut butter balls are chilling, prepare the chocolate coating. In a microwave-safe bowl, combine the Lily’s chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each interval, until the chocolate is completely melted and smooth.
  5. Remove the peanut butter balls from the refrigerator. Using a fork or dipping tool, carefully dip each ball into the melted chocolate, making sure it is completely coated. Allow any excess chocolate to drip off before placing the coated ball back onto the baking sheet.
  6. Once all the balls are coated in chocolate, return the baking sheet to the refrigerator to allow the chocolate to set, usually for about 1 hour.
  7. Once the chocolate coating is firm, transfer the peanut butter balls to an airtight container and store them in the refrigerator until ready to serve.
