Keto Peanut Butter Fudge

Ingredients:

  • 8 tablespoons of butter
  • 1/2 cup Swerve brown sugar
  • 1 cup natural peanut butter
  • 1 teaspoon vanilla extract
  • 1/2 cup pecans (optional)

Instructions:

  1. In a saucepan, melt the butter over low heat. Once melted, add the Swerve brown sugar and stir until it dissolves, bringing the mixture to a low boil.
  2. Remove the saucepan from the heat and stir in the vanilla extract and natural peanut butter until the mixture is smooth and well combined. If you’re adding pecans, stir them in as well.
  3. Line a loaf pan with parchment paper or use an aluminum pan. Pour the peanut butter mixture into the lined pan, spreading it evenly.
  4. Place the pan in the freezer and let the fudge set for a few hours, or until firm.
  5. Once the fudge is set, remove it from the freezer and cut it into squares using a sharp knife.
  6. Store the fudge in an airtight container in the refrigerator until ready to serve.
