Egg Salad on an Egg Chaffle

Egg Salad Filling: Ingredients:

  • 3 eggs
  • 1 tablespoon mayonnaise
  • 1 teaspoon mustard
  • 1/2 tablespoon lemon juice
  • Pink salt, to taste
  • 1 teaspoon celery seed
  • 1 teaspoon everything bagel seasoning

Instructions:

  1. Place the eggs in a pot of water and bring it to a boil. Once boiling, turn off the heat and let the eggs sit in the hot water for 15 minutes.
  2. After 15 minutes, remove the eggs from the hot water and peel them. Place them in a bowl.
  3. Mash the boiled eggs with a fork.
  4. Add mayo, mustard, lemon juice, pink salt, celery seed, and everything bagel seasoning to the mashed eggs.
  5. Mix all the ingredients together until well combined. Set aside.

Everything Bagel Chaffle: Ingredients:

  • 1 egg
  • 3 tablespoons shredded yellow or white cheese
  • 1 tablespoon mayonnaise
  • Everything bagel seasoning
  • 1 teaspoon celery seed

Instructions:

  1. Preheat your mini dash waffle iron or regular waffle iron.
  2. In a bowl, combine the egg, mayo, 1.5 tablespoons of cheese, everything bagel seasoning, and celery seed. Mix well.
  3. If using a mini dash waffle iron, sprinkle a little shredded cheese on the bottom of the iron.
  4. Pour half of the egg mixture into the mini dash waffle iron. If using a regular waffle iron, pour the entire mixture.
  5. Close the waffle iron and cook until the chaffle is golden brown and crispy.
  6. Repeat the process with the remaining egg mixture to make a second chaffle.
  7. Once both chaffles are cooked, assemble the sandwich by placing a generous amount of egg salad filling on top of one chaffle and then placing the other chaffle on top to create a sandwich.
