Egg Salad on an Egg Chaffle

Egg Salad Filling: Ingredients:
- 3 eggs
- 1 tablespoon mayonnaise
- 1 teaspoon mustard
- 1/2 tablespoon lemon juice
- Pink salt, to taste
- 1 teaspoon celery seed
- 1 teaspoon everything bagel seasoning

Instructions:
- Place the eggs in a pot of water and bring it to a boil. Once boiling, turn off the heat and let the eggs sit in the hot water for 15 minutes.
- After 15 minutes, remove the eggs from the hot water and peel them. Place them in a bowl.
- Mash the boiled eggs with a fork.
- Add mayo, mustard, lemon juice, pink salt, celery seed, and everything bagel seasoning to the mashed eggs.
- Mix all the ingredients together until well combined. Set aside.
Everything Bagel Chaffle: Ingredients:
- 1 egg
- 3 tablespoons shredded yellow or white cheese
- 1 tablespoon mayonnaise
- Everything bagel seasoning
- 1 teaspoon celery seed
Instructions:
- Preheat your mini dash waffle iron or regular waffle iron.
- In a bowl, combine the egg, mayo, 1.5 tablespoons of cheese, everything bagel seasoning, and celery seed. Mix well.
- If using a mini dash waffle iron, sprinkle a little shredded cheese on the bottom of the iron.
- Pour half of the egg mixture into the mini dash waffle iron. If using a regular waffle iron, pour the entire mixture.
- Close the waffle iron and cook until the chaffle is golden brown and crispy.
- Repeat the process with the remaining egg mixture to make a second chaffle.
- Once both chaffles are cooked, assemble the sandwich by placing a generous amount of egg salad filling on top of one chaffle and then placing the other chaffle on top to create a sandwich.
