Ingredients:

- 1 cup almond flour
- 7 tbsp butter
- 2 eggs
- 1/2 tsp xanthan gum
- Optional: sweetener (to taste)
- Optional: vanilla extract (1/2 tsp)
For the Filling:
- 1 brick of cream cheese
- Confectioners’ monk fruit sweetener (for coating)
- Ground cinnamon (for rolling)

Instructions:
- Prepare the Cream Cheese Filling:
- Cut the brick of cream cheese into small, bite-sized pieces.
- Roll each piece in confectioners’ monk fruit sweetener until coated.
- Place the coated pieces on a tray and freeze until solid.
- Make the Dough:
- In a mixing bowl, combine the almond flour and xanthan gum.
- Cut the butter into the flour mixture until it resembles coarse crumbs.
- If using, add the optional sweetener and vanilla extract.
- Beat the eggs and mix them into the flour mixture. Use your hands to knead the dough until it forms a smooth, pliable texture.
- Wrap the dough in plastic wrap and refrigerate for at least one hour to firm up.
- Assemble the Cinnamon Sticks:
- Once the dough has chilled and the cream cheese is frozen, place the dough between two sheets of parchment paper.
- Roll out the dough to about 1/4 inch thickness.
- Cut the dough into rectangles large enough to wrap around the cream cheese pieces.
- Place a piece of frozen cream cheese in the center of each dough rectangle and wrap the dough around it, sealing the edges.
- Cook the Cinnamon Sticks:
