Keto Coconut jelly
An AIP paleo coconut treat made with grass-fed gelatin and coconut cream. With only 3 simple ingredients, this coconut jello is sure to become a regular.

Active time: 20 minutes Total time: 2 hours, 20 minutes Servings: 16

Ingredients:

2 packets of unflavored gelatin (I used Knox)

1/2 cup water

1 can coconut cream (13.5 oz, I used Mae Ploy)

1/2 cup heavy cream

1/3 cup sweetener (I used Lakanto classic monk fruit sweetener/amount can be adjusted for desired sweetness)

1/2 tsp salt

Directions:

  1. Mix gelatin and water together and set aside

  2. In a medium saucepan, whisk coconut cream, heavy cream, sweetener, and salt over medium heat, until warmed and the sweetener has dissolved

  3. Add gelatin and water mixture to saucepan and whisk until dissolved

  4. Pour the mixture through a fine mesh sieve into a 8X8 pan

  5. Allow mixture to cool on the counter top for about 15 minutes

  6. Cover and refrigerate until set, about 2 hours

  7. Optional, sprinkle with unsweetened, toasted coconut flakes
