1/3 cup crushed pork rinds
1/4 cup real mayo

1 tbsp Cajun Lovers seasoning
1 tsp dijon mustard
Tartar Sauce
1 cup real mayo
1 cup minced dill pickles ( we used dill relish )
1 tbsp dried or fresh dill
1 tsp powdered monk fruit
1 tsp fresh ground pepper
1 tsp lemon juice
2 tsp onion powder
Heat up your cast iron and preheat oven to 400° 15 minutes prior to the cook.

Instructions:

1) In a med bowl scrambled egg, add mayo, combine, add pork rinds, combine. Then throw in the rest of the spices, Give it a mix, add lump crab last and fold in with your hands gently to not break up the crab too much. After combined let rest in the fridge for 30 mins.

2) While crab mixture is in the fridge , combine all tartar sauce ingredients and mix well. We put it into a small Mason jar and put it in the fridge.

3) Get out the crab mixture and make into patties. Fry in desired oil. We used garlic-infused olive oil. About 4 minutes aside. Finish off in the oven for 15 minutes. Secret…. *We brushed the top with butter prior to putting in the oven. Take out and plate right away.. Hope you enjoy. Shawn was not a big crab cake girl until she had these. Perfect.
