Ingredients:

  • 1 pound Brussels sprouts, trimmed and halved
  • 6 slices of bacon, chopped
  • 3 cloves garlic, minced
  • 1/2 cup half and half
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a baking dish with butter or cooking spray and set aside.
  2. In a large skillet over medium heat, cook the chopped bacon until crispy. Use a slotted spoon to transfer the bacon to a plate lined with paper towels to drain excess grease. Set aside.
  3. In a pot of boiling water, blanch the Brussels sprouts halves for about 5 minutes. This helps to remove bitterness. Drain the Brussels sprouts and set aside.
  4. In the same skillet used to cook the bacon, add the minced garlic and sauté for about 1 minute until fragrant.
  5. Add the blanched Brussels sprouts to the skillet with the garlic. Season with salt and pepper, and any additional spices you like. Stir to coat the Brussels sprouts with the garlic and seasoning mixture.
  6. Pour in the half and half and let it simmer for a few minutes until it starts to thicken slightly.
  7. Add the cooked bacon back into the skillet with the Brussels sprouts and stir to combine.
