keto creamy chicken fajita casserole

Ingredients:

  • Chicken breasts, cooked and sliced
  • Bell peppers, sliced (various colors)
  • Onion, sliced
  • Fajita seasoning (keto-friendly)
  • Cream cheese
  • Heavy cream
  • Shredded cheese (cheddar, mozzarella, or a blend)
  • Olive oil
  • Salt and pepper
  • Optional toppings: sour cream, avocado, cilantro

Instructions:

  1. Preheat your oven to a moderate temperature, usually around 350°F (175°C).
  2. In a skillet, heat some olive oil over medium heat. Add sliced bell peppers and onions, and cook until they start to soften and caramelize.
  3. Add the cooked and sliced chicken to the skillet. Sprinkle with keto-friendly fajita seasoning, salt, and pepper. Cook for a few more minutes to combine the flavors.
  4. In a separate saucepan, melt a portion of cream cheese over low heat. Once it’s softened, gradually add in heavy cream while stirring to create a creamy sauce.
  5. Mix the creamy sauce into the chicken and vegetable mixture, ensuring everything is evenly coated.
  6. Transfer the mixture to a casserole dish and spread it out evenly.
  7. Top the casserole with shredded cheese.
  8. Bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly.
  9. Once the casserole is cooked through and the cheese is golden, remove it from the oven.
  10. Allow it to cool slightly before serving. You can top servings with optional toppings like sour cream, avocado slices, or fresh cilantro.
