Keto Jalapeno Popper Stuffed Turkey Meatloaf

The good news is that this pork meatloaf recipe is totally low carb friendly. Nobody will believe that you’re actually on a diet when they see (or taste if you’re into sharing) this gorgeous celebration of pork and cheese. I respect the fact that we all keto (yes I used “keto” as a verb right there) differently, but if you are new to keto or have the desire to incorporate more vegetables into your diet, I have included links to three great articles on the subject below.
Turkey meatloaf:
300 g lean ground turkey
.5 cup almond flour
1 Large Egg
25 g sweet bell peppers
50 g diced onion
2 tbsp minced garlic
25 g zucchini
Well seasoned, mixed till just combined
Stuffing
4 oz of 3-Pepper Colby Jack cheese and 4 oz of NY Cheddar Cheese shredded and mixed with 7 medium jalapeno peppers, seeded and diced (150 g).
Optional Sauce:
4 tbsp sugar-free ketchup
1 tbsp stone-ground mustard
1 tbsp Worcestershire
Assembly:
Press 2/3 of turkey meatloaf mixture along the bottom and walls of the pan leaving a trough for the stuffing, add jalapeno cheese stuffing, then cover with last 1/3 of the meatloaf mixture (press on sides to connect the walls to the top. Bake at 350 for 30 minutes, at which point the pan should have a ton of moisture that needs to be drained, then 15 more minutes, drain again and paint with sauce, then another 20 minutes or until the sauce starts to solidify.
