Keto Lemon Mousse
Ingredients:
- 1 cup heavy cream
- 1/4 cup powdered erythritol or sweetener of your choice
- 1 tablespoon fresh lemon zest
- 1/4 cup freshly squeezed lemon juice
- 1 teaspoon unflavored gelatin powder
- 1/4 cup cold water
- Optional: a few drops of yellow food coloring (for a brighter color)
Instructions:
- In a mixing bowl, combine the cold water and gelatin powder. Let it sit for a few minutes to allow the gelatin to bloom.
- In a saucepan, heat the lemon juice over low heat. Do not boil.
- Add the bloomed gelatin to the warm lemon juice and stir until the gelatin is completely dissolved. Set aside to cool to room temperature.
- In a separate bowl, whip the heavy cream and powdered erythritol until stiff peaks form.
- Gently fold in the lemon zest and cooled lemon-gelatin mixture into the whipped cream until well combined. If desired, add a few drops of yellow food coloring for a brighter color.
- Divide the mousse into individual serving dishes or glasses.
- Chill in the refrigerator for at least 2 hours or until the mousse is set.
- Garnish with additional lemon zest or a slice of lemon before serving.
