Keto Lemon Mousse

Ingredients:

  • 1 cup heavy cream
  • 1/4 cup powdered erythritol or sweetener of your choice
  • 1 tablespoon fresh lemon zest
  • 1/4 cup freshly squeezed lemon juice
  • 1 teaspoon unflavored gelatin powder
  • 1/4 cup cold water
  • Optional: a few drops of yellow food coloring (for a brighter color)

Instructions:

  1. In a mixing bowl, combine the cold water and gelatin powder. Let it sit for a few minutes to allow the gelatin to bloom.
  2. In a saucepan, heat the lemon juice over low heat. Do not boil.
  3. Add the bloomed gelatin to the warm lemon juice and stir until the gelatin is completely dissolved. Set aside to cool to room temperature.
  4. In a separate bowl, whip the heavy cream and powdered erythritol until stiff peaks form.
  5. Gently fold in the lemon zest and cooled lemon-gelatin mixture into the whipped cream until well combined. If desired, add a few drops of yellow food coloring for a brighter color.
  6. Divide the mousse into individual serving dishes or glasses.
  7. Chill in the refrigerator for at least 2 hours or until the mousse is set.
  8. Garnish with additional lemon zest or a slice of lemon before serving.
