One Pan Cheesy Jalapeño Chicken
Ingredients:
- 4 small chicken breasts (about 1.5 lbs)
- 1 tsp cumin
- 1/2 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 onion, chopped
- 2 jalapeños, seeded and diced
- 1 tsp minced garlic
- 1/4 cup heavy whipping cream
- 1/2 cup chicken broth
- 2 oz cream cheese
- 1 cup shredded cheddar cheese (divided)

Instructions:
- In a small bowl, combine cumin, chili powder, garlic powder, salt, and pepper. Set aside.
- Heat a 12-inch skillet over medium heat. Spray with non-stick spray or add 1 tbsp avocado oil. Season both sides of the chicken breasts with the spice mixture. Sear the chicken for 2-3 minutes on each side until nicely browned. Remove from skillet and set aside.
- In the same skillet, add 1 tbsp butter along with chopped onion, diced jalapeños, and minced garlic. Sauté for 3-4 minutes, stirring occasionally.
- Pour in the heavy whipping cream, chicken broth, and add the cream cheese. Reduce heat to low and stir until the cream cheese melts completely. Add 1/2 cup of shredded cheddar cheese to the sauce and stir well.
- Return the chicken to the skillet and cover with the remaining shredded cheddar cheese. Place a lid on the skillet and let simmer on low heat for 6 to 8 minutes, until the chicken is cooked through and the cheese is melted and bubbly.
