One Pan Cheesy Jalapeño Chicken

Ingredients:

  • 4 small chicken breasts (about 1.5 lbs)
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 onion, chopped
  • 2 jalapeños, seeded and diced
  • 1 tsp minced garlic
  • 1/4 cup heavy whipping cream
  • 1/2 cup chicken broth
  • 2 oz cream cheese
  • 1 cup shredded cheddar cheese (divided)

Instructions:

  1. In a small bowl, combine cumin, chili powder, garlic powder, salt, and pepper. Set aside.
  2. Heat a 12-inch skillet over medium heat. Spray with non-stick spray or add 1 tbsp avocado oil. Season both sides of the chicken breasts with the spice mixture. Sear the chicken for 2-3 minutes on each side until nicely browned. Remove from skillet and set aside.
  3. In the same skillet, add 1 tbsp butter along with chopped onion, diced jalapeños, and minced garlic. Sauté for 3-4 minutes, stirring occasionally.
  4. Pour in the heavy whipping cream, chicken broth, and add the cream cheese. Reduce heat to low and stir until the cream cheese melts completely. Add 1/2 cup of shredded cheddar cheese to the sauce and stir well.
  5. Return the chicken to the skillet and cover with the remaining shredded cheddar cheese. Place a lid on the skillet and let simmer on low heat for 6 to 8 minutes, until the chicken is cooked through and the cheese is melted and bubbly.
  6. Serve the One Pan Cheesy Jalapeño Chicken hot, with additional jalapeño slices or chopped cilantro for garnish if desired.
