Keto Peanut Butter Balls – Low Carb Recipe

Ingredients:

  • 1 cup natural peanut butter (no added sugar)
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup coconut flour
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons powdered erythritol (or your preferred keto-friendly sweetener)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1/4 cup sugar-free chocolate chips (for coating)

Instructions:

  1. In a mixing bowl, combine the peanut butter, shredded coconut, coconut flour, cocoa powder, erythritol, vanilla extract, and salt. Mix well until all the ingredients are thoroughly combined.
  2. Place the mixture in the refrigerator for about 15-20 minutes to firm up slightly, making it easier to form into balls.
  3. After chilling, remove the mixture from the refrigerator and shape it into small balls, approximately 1 inch in diameter, using your hands.
  4. Melt the sugar-free chocolate chips in the microwave or using a double boiler.
  5. Dip each peanut butter ball into the melted chocolate, making sure to coat it completely.
  6. Place the coated balls on a parchment paper-lined tray or plate.
  7. Return the peanut butter balls to the refrigerator for about 30 minutes to allow the chocolate coating to set.
  8. Once the chocolate has set, transfer the peanut butter balls to an airtight container and store them in the refrigerator.
