Keto Peanut Butter Balls – Low Carb Recipe
Ingredients:
- 1 cup natural peanut butter (no added sugar)
- 1/2 cup unsweetened shredded coconut
- 1/4 cup coconut flour
- 2 tablespoons unsweetened cocoa powder
- 2 tablespoons powdered erythritol (or your preferred keto-friendly sweetener)
- 1 teaspoon vanilla extract
- Pinch of salt
- 1/4 cup sugar-free chocolate chips (for coating)
Instructions:
- In a mixing bowl, combine the peanut butter, shredded coconut, coconut flour, cocoa powder, erythritol, vanilla extract, and salt. Mix well until all the ingredients are thoroughly combined.
- Place the mixture in the refrigerator for about 15-20 minutes to firm up slightly, making it easier to form into balls.
- After chilling, remove the mixture from the refrigerator and shape it into small balls, approximately 1 inch in diameter, using your hands.
- Melt the sugar-free chocolate chips in the microwave or using a double boiler.
- Dip each peanut butter ball into the melted chocolate, making sure to coat it completely.
- Place the coated balls on a parchment paper-lined tray or plate.
- Return the peanut butter balls to the refrigerator for about 30 minutes to allow the chocolate coating to set.
- Once the chocolate has set, transfer the peanut butter balls to an airtight container and store them in the refrigerator.
