Pizza Nachos Keto Style

Ingredients:

  • Keto-friendly wraps or tortillas (low-carb and high fiber)
  • Olive oil for frying
  • Rao’s pizza sauce or any low-carb pizza sauce
  • Shredded mozzarella cheese
  • Sliced spicy pepperoni (or any other keto-friendly pizza toppings you prefer, such as cooked sausage, diced bell peppers, sliced olives, etc.)
  • Optional toppings: diced onions, jalapeños, black olives, diced tomatoes, sliced mushrooms, etc.
  • Fresh basil leaves for garnish (optional)
  • Keto-friendly sour cream or guacamole for dipping (optional)

Instructions:

  1. Preheat your oven’s broiler on high.
  2. Cut the keto-friendly wraps or tortillas into triangle-shaped wedges, like nachos.
  3. In a large skillet, heat a few tablespoons of olive oil over medium-high heat.
  4. Once the oil is hot, fry the tortilla wedges in batches until they are crispy and golden brown, about 1-2 minutes per side. Place the fried wedges on a paper towel-lined plate to drain any excess oil.
  5. Preheat your oven-safe dish or baking sheet under the broiler for a few minutes to heat it up.
  6. Once the dish is hot, carefully arrange the fried tortilla wedges in a single layer on the hot dish or baking sheet.
  7. Spoon Rao’s pizza sauce or your preferred low-carb pizza sauce evenly over the tortilla wedges.
  8. Sprinkle a generous amount of shredded mozzarella cheese over the sauce-covered wedges.
  9. Add the sliced spicy pepperoni (or other chosen toppings) on top of the cheese.
  10. If desired, add any additional toppings such as diced onions, jalapeños, black olives, diced tomatoes, or sliced mushrooms.
  11. Place the loaded nachos under the preheated broiler for 3-4 minutes, or until the cheese is melted and bubbly, and the toppings are heated through. Keep a close eye on them to prevent burning.
  12. Once done, carefully remove the nachos from the oven using oven mitts.
  13. Garnish with fresh basil leaves, if desired, for added flavor and freshness.
