Ingredients:

  • 1/2 cup butter, melted
  • 2 cups sugar-free chocolate chips
  • 1 package Catalina Crunch cereal
  • 1/3 cup Swerve confectioners sugar
  • 1 cup peanut butter
  • 1 package Max Mallow marshmallows, cut into quarters
  • 1/2 cup chopped almonds

Instructions:

  1. Melt the butter over low heat in a saucepan. Once melted, add the sugar-free chocolate chips and continue to heat until smooth and fully melted.
  2. Stir in the peanut butter until well combined with the melted chocolate mixture.
  3. In a large mixing bowl, combine the Catalina Crunch cereal with the chocolate-peanut butter mixture. Mix until all the cereal is evenly coated.
  4. Add the Swerve confectioners sugar to the mixture and fold it in until fully incorporated.
  5. Gently fold in the quartered Max Mallow marshmallows and chopped almonds until evenly distributed throughout the mixture.
  6. Pour the mixture into a parchment-lined 9×9-inch pan and smooth it out evenly with a spatula.
  7. Refrigerate the pan for at least one hour to allow the mixture to set.
  8. Once set, remove the mixture from the pan and cut it into squares to make 20 bars.
  9. Store the Keto Rocky Road Crunch Bars in an airtight container in the refrigerator.
