Ingredients:

For the Stuffed Zucchini:

  • 4 medium zucchinis
  • 1 cup homemade spaghetti sauce
  • 1/2 lb ground beef
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Italian seasoning, to taste
  • Crushed red pepper flakes (optional)

For the Topping:

  • 1 cup shredded mozzarella cheese
  • Sliced pepperoni (as much as desired)
  • Additional Italian seasoning for garnish

Instructions:

1. Preheat the oven to 375°F (190°C).

2. Prepare the Zucchini:

  • Wash the zucchinis and slice them in half lengthwise.
  • Use a spoon to scoop out the insides of each zucchini half, creating a hollow “boat.” Set aside the scooped-out zucchini flesh for later use.

3. Prepare the Filling:

  • In a skillet over medium heat, add olive oil.
  • Add the ground beef to the skillet and cook until browned, breaking it up with a spatula as it cooks.
  • Season the beef with salt, pepper, Italian seasoning, and crushed red pepper flakes, if using.
  • Once the beef is cooked through, add the homemade spaghetti sauce to the skillet and stir to combine.
  • Allow the mixture to simmer for a few minutes, then remove it from the heat.

4. Stuff the Zucchini Boats:

  • Place the hollowed-out zucchini boats in a baking dish.
