Meatball Boats
Ingredients: For the Meatballs:
- 1 pound ground beef (you can also use a combination of ground beef and pork)
- 1/4 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup finely chopped onion
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste

For the “Boats”:
- 4 large zucchinis, halved lengthwise
- Olive oil for brushing
- Salt and pepper to taste

For the Sauce:
- 1 cup low-carb tomato sauce or marinara sauce (look for brands with no added sugar)
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste

For Topping:
- 1 cup shredded mozzarella cheese
- Fresh basil leaves for garnish (optional)
Instructions:
- Preheat your oven to 375°F (190°C).
- To make the meatballs, in a large mixing bowl, combine the ground meat, almond flour, Parmesan cheese, parsley, onion, egg, garlic powder, dried oregano, salt, and pepper. Mix until well combined.
- Form the mixture into small meatballs, about 1 inch in diameter. You should get around 20 meatballs.
- Heat a skillet over medium-high heat and add some olive oil. Brown the meatballs on all sides, but they don’t need to be fully cooked at this stage. Transfer them to a plate and set aside.
- While the meatballs are cooking, prepare the zucchini boats. Cut the zucchinis in half lengthwise and scoop out the inner flesh, creating a “boat” for the meatballs. Brush the zucchini boats with olive oil and season with salt and pepper.
- In a separate bowl, mix the low-carb tomato sauce with dried basil, dried oregano, salt, and pepper.
- Place the zucchini boats in a baking dish and fill them with the tomato sauce mixture.
- Arrange the meatballs in the zucchini boats, pushing them down into the sauce.
- Cover the baking dish with foil and bake in the preheated oven for about 25-30 minutes, or until the meatballs are cooked through.
- Remove the foil, sprinkle mozzarella cheese over the meatballs, and return to the oven. Bake for an additional 10-15 minutes or until the cheese is melted and bubbly.
- Garnish with fresh basil leaves if desired.
