Ingredients:

For the Mug Cake:

  • 1 egg

  • A pinch of salt
  • 2 teaspoons of cream cheese, cut into small bits
  • 1 tablespoon of sugar-free chocolate chips

For the Topping (Choose one): Option 1: Canned Sugar-Free Whipped Cream Option 2: Homemade Cream Cheese Whipped Cream

  • 2 ounces of cream cheese
  • 1/4 cup of heavy whipping cream
  • 1 teaspoon of powdered sweetener (such as powdered erythritol or powdered Monk Fruit)

Instructions:

  1. Start by selecting a microwave-safe mug or cup, preferably one with a capacity of at least 12 ounces to allow room for the cake to rise while cooking.
  2. Place 1 tablespoon of butter in the mug and microwave it for about 20 seconds or until the butter is fully melted.
  3. Remove the mug from the microwave and swirl the melted butter around the sides of the mug to prevent sticking.
  4. In the mug with the melted butter, add 1 egg and 1/2 teaspoon of vanilla extract. Use a fork or a small whisk to beat the egg and vanilla together until well combined.
