Mozzarella Stuffed Meatballs

Serve meatballs over zucchini noodles, topped with the sauce. Enjoy!

Ingredients:

  • 1 lb ground beef
  • 1/2 cup Parmesan cheese
  • 1/4 cup almond flour
  • 1/4 cup parsley
  • 2 cloves garlic
  • 1 tsp each of oregano and basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 egg
  • Mozzarella cheese balls
  • Olive oil

Instructions:

  1. Mix beef, Parmesan, almond flour, parsley, garlic, spices, salt, pepper, and egg.
  2. Form meatballs, encasing Mozzarella.
  3. Sear in olive oil, then bake at 375°F for 15-20 mins.

Low-Carb Spaghetti Sauce:

Ingredients:

  • 2 cups crushed tomatoes
  • 1/4 cup olive oil
  • 1 onion, garlic
  • 1 tsp each of oregano and basil
  • Salt and pepper

Instructions:

  1. Sauté onion and garlic in olive oil.
  2. Add tomatoes, oregano, basil, salt, and pepper.
  3. Simmer for 15-20 mins.
