no bake black cheery chocolate covered cheesecake truffles

Ingredients:

  • 8 oz (225g) cream cheese, softened
  • 1 cup (120g) powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup (80g) black cherries, pitted and chopped
  • 1 1/2 cups (225g) chocolate chips (semi-sweet or dark), melted
  • Graham cracker crumbs or crushed nuts for coating (optional)

Instructions:

  1. In a mixing bowl, beat the softened cream cheese until smooth.
  2. Add powdered sugar and vanilla extract. Mix until well combined.
  3. Fold in the chopped black cherries gently into the cream cheese mixture.
  4. Line a baking sheet with parchment paper.
  5. Scoop out tablespoon-sized portions of the mixture and roll them into balls. Place them on the prepared baking sheet.
  6. Freeze the cheesecake balls for about 30 minutes until firm.
  7. Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each interval until smooth.
  8. Using a fork or toothpick, dip each cheesecake ball into the melted chocolate until fully coated. Tap off any excess chocolate.
  9. Place the coated truffles back on the parchment paper.
  10. Optionally, roll the truffles in graham cracker crumbs or crushed nuts for extra flavor and texture.
  11. Refrigerate the truffles for at least 1 hour to set the chocolate coating.
