Keto Cornbread β€” Soft, Buttery & Low-Carb

This almond-flour cornbread is tender, buttery, slightly sweet, and perfect alongside chili, soup, or barbecue. It uses almond flour instead of traditional cornmeal, so it can fit a keto/low-carb approach. Similar almond-flour versions use eggs, butter, baking powder, and a keto sweetener for structure and flavor.

🧈 Ingredients

Makes 9–12 squares

  • 1ΒΌ cups fine almond flour
  • 1 tsp baking powder
  • ΒΌ tsp salt
  • 2–3 tbsp granulated keto sweetener, optional
  • 3 large eggs
  • Β½ cup butter, melted and slightly cooled
  • β…“ cup heavy cream
  • Β½ tsp corn extract, optional, for a more traditional cornbread flavor
  • Β½ tsp vanilla extract, optional if making a slightly sweet version
  • Β½ cup shredded cheddar cheese, optional for cheesy cornbread
  • 1–2 tbsp melted butter for brushing the top

1. Preheat the oven
Heat oven to 350Β°F (175Β°C). Grease an 8Γ—8-inch baking dish or small cast-iron skillet. Line the bottom with parchment if desired.

2. Combine the dry ingredients
In a medium bowl, whisk together the almond flour, baking powder, salt, and keto sweetener.

3. Mix the wet ingredients
In another bowl, whisk the eggs. Add the melted butter and heavy cream and whisk until smooth.

4. Combine
Pour the wet mixture into the dry ingredients. Add the corn extract if using. Stir gently just until everything is incorporated. Don’t overmix.

The batter should be thick but spreadable. If it seems unusually thick, add 1–2 tablespoons of heavy cream.

5. Add cheese if desired
For a savory, cheesy version, fold in about Β½ cup shredded cheddar.

6. Transfer to the pan
Spread the batter evenly into the prepared pan. Smooth the top with a spatula.

7. Bake
Bake for approximately 25–30 minutes, or until the center is set and a toothpick inserted in the middle comes out mostly clean. Almond-flour cornbreads commonly bake around 20–30 minutes depending on pan size and recipe.

8. If the top gets too dark
If the top is browning faster than you like, loosely cover it with foil during the final portion of baking. And yesβ€”flipping the finished cornbread onto a plate or rack is perfectly fine if you prefer the lighter side facing up. πŸ˜‰

9. Cool and slice
Let it cool for 10–15 minutes before cutting. Brush the top with melted butter for an extra buttery finish.

Since traditional cornmeal isn’t being used, corn extract is a useful option for adding that familiar corn flavor without adding actual cornmeal. Several keto cornbread recipes specifically use corn extract for this purpose.

Keto note: This is a cornbread-style recipe rather than actual cornbread because it contains no cornmeal. Exact carbs depend on your almond flour, dairy, and sweetener brands. Some comparable almond-flour recipes report roughly 1.7–2 g net carbs per serving, but your finished recipe can differ.
