🧀 Easy Low-Carb Pizza Crust

Okay guys and gals! I found my replacement for pizza night! 😍🍕 If everyone else is having regular pizza, this cheesy, flourless version gives you that delicious pizza feeling without a traditional dough crust. It’s made with just mozzarella, Parmesan, eggs, Italian seasoning, and pepperoni. Similar egg-and-cheese pizza crusts are widely used as low-carb alternatives to flour-based crusts.

🛒 Ingredients

Makes 1 whole sheet pan — about 4 servings

For the crust:

  • 2 cups shredded mozzarella cheese
  • 2 cups shredded or finely grated Parmesan cheese
  • 2 large eggs
  • 2 tsp Italian seasoning
  • ½ tsp garlic powder, optional
  • ¼ tsp black pepper
  • Pinch of salt, optional

Toppings:

  • Pepperoni slices, as desired
  • 2–4 tbsp low-carb pizza sauce, for dipping or drizzling
  • Optional: extra mozzarella
  • Optional: sliced mushrooms
  • Optional: black olives
  • Optional: jalapeños
  • Optional: crushed red pepper flakes

👩‍🍳 Detailed Instructions

1. Preheat the oven

Preheat your oven to 350°F (175°C).

Line a large cookie sheet or sheet pan with parchment paper. This is important because the cheese crust can stick as it bakes.

2. Make the cheesy mixture

In a large mixing bowl, combine:

  • Mozzarella
  • Parmesan
  • Eggs
  • Italian seasoning
  • Garlic powder
  • Black pepper

Mix thoroughly until the eggs coat all of the cheese and everything is evenly combined.

The mixture will look thick and cheesy rather than like traditional pizza dough—that’s exactly what you want.

3. Spread onto the pan

Transfer the mixture onto your parchment-lined baking sheet.

Use a spatula or the back of a spoon to spread it into an even layer.

Try not to make the middle dramatically thicker than the edges. An even layer helps the crust cook consistently.

For a crispier crust, spread it relatively thin. Cheese-and-egg crust recipes similarly rely on spreading the mixture evenly before baking.

4. Add the pepperoni

Arrange pepperoni slices over the surface.

You can add as much or as little as you like. For extra cheesy pizza flavor, sprinkle a little additional mozzarella over the top.

5. Bake

Place the sheet pan in the preheated oven.

Bake for approximately 25 minutes, or until the crust is cooked through and the cheese is deeply golden around the edges.

Keep an eye on it during the last few minutes because Parmesan can brown quickly.

6. Make it extra crispy

If you love crispy edges, turn on the broiler for 1–2 minutes at the end.

Watch it closely! The cheese can go from beautifully browned to burnt very quickly.

7. Let it rest

Remove the pizza from the oven and let it rest for 5–10 minutes.

This is important because the crust will firm up as it cools, making it easier to cut and pick up.

8. Slice and serve

Cut the sheet into 4 large pieces or 6–8 smaller pieces.

Serve with a couple of spoonfuls of low-carb pizza sauce for dipping.

🍅 Easy Dipping Sauce

Mix together:

  • ¼ cup low-carb pizza sauce
  • ¼ tsp Italian seasoning
  • Pinch of garlic powder
  • Pinch of red pepper flakes, optional

Warm it slightly and serve alongside your pizza.

💡 For a Blood-Sugar-Friendly Version

If you’re making this specifically as an alternative to regular pizza, pay attention to the pizza sauce and any additional toppings, because those can add carbohydrates. Choosing a no-sugar-added/low-carb sauce and keeping the portion reasonable can help keep the meal lower in carbohydrates. Pairing pizza with protein and non-starchy vegetables is also one strategy dietitians recommend for a more balanced meal.

And one important note: the stated 24–25 carbs for the whole sheet isn’t universal—the actual number depends on your specific cheese, pepperoni, seasoning, and sauce brands. Check the nutrition labels if you’re tracking carbohydrates closely.
