For the Zucchini Boats:

4 medium zucchinis
2 cups cooked chicken breast, shredded
1 cup grated Parmesan cheese
Salt and black pepper to taste
For the Alfredo Sauce:

1 cup heavy cream
1/2 cup unsalted butter
1 cup grated Parmesan cheese
2 cloves garlic, minced
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and black pepper to taste
Chopped fresh parsley, for garnish (optional)

Instructions:

Preheat your oven to 375°F (190°C).

Start by preparing the zucchinis. Cut off the ends and slice them in half lengthwise. Using a spoon, scoop out the center flesh of each zucchini half, creating a boat-like shape. Leave about 1/4 inch of flesh around the edges. Set aside the scooped-out zucchini for later use.

Place the zucchini boats on a baking sheet lined with parchment paper or in a baking dish. Season them with salt and black pepper.

In a skillet over medium heat, melt the butter for the Alfredo sauce. Add the minced garlic and sauté for about 1-2 minutes until fragrant.

Pour in the heavy cream and whisk to combine. Let it simmer for a few minutes until it starts to thicken.

Stir in the grated Parmesan cheese, garlic powder, onion powder, salt, and black pepper. Continue to cook, stirring constantly, until the sauce is smooth and creamy. Remove it from the heat.

Mix the shredded chicken into the Alfredo sauce, ensuring it’s well-coated.

Spoon the chicken Alfredo mixture into each zucchini boat, filling them evenly.

Sprinkle additional grated Parmesan cheese on top of each zucchini boat.

Place the filled zucchini boats in the preheated oven and bake for about 20-25 minutes, or until the zucchini is tender and the cheese is bubbly and golden.

Garnish with chopped fresh parsley if desired.
