Crustless Keto Pizza Casserole
This keto-friendly casserole is not only tasty but also a great option for a low-carb, high-fat diet.
Ingredients:
- 2 lbs Italian sausage
- 2 tbsp olive oil
- 1 medium yellow onion, thinly sliced
- 1 large bell pepper, thinly sliced
- 8 oz baby Bella mushrooms (optional), sliced
- 1/2 tsp salt
- 1/2 tsp black pepper
- 5 oz pepperoni
- 2 cups tomato sauce
- 3 cups Mexican blend shredded cheese

Instructions:
- Preheat your oven to 425°F (220°C).
- In a large skillet, brown the Italian sausage over medium-high heat until fully cooked. Once cooked, remove the sausage from the skillet and set it aside.
- In the same skillet, add 2 tablespoons of olive oil and heat it over medium heat. Add the thinly sliced onions, bell peppers, and sliced mushrooms (if you’re using them). Sprinkle with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper. Sauté the vegetables until they become translucent and slightly softened, which should take about 5-7 minutes. Remove from heat.
- In a 9×13 inch baking dish, create two layers as follows:
- Start with a layer of the cooked Italian sausage.
- Add the sautéed onions, bell peppers, and mushrooms on top of the sausage.
- Spread 2 cups of tomato sauce evenly over the vegetables.
- Sprinkle 3 cups of Mexican blend shredded cheese over the sauce.
- Arrange the pepperoni slices on top of the cheese.
- Place the casserole in the preheated oven and bake for 15-20 minutes, or until the cheese is fully melted, and the casserole is bubbling and slightly golden on top.
- Once done, remove the casserole from the oven and allow it to cool for a few minutes.
