EASY MADE ITALIAN MEATLOAF
Meatloaf:

- 1 1/2 pounds ground beef (preferably lean)
- 1/2 pound ground Italian sausage (look for one with no added sugars)
- 1/2 cup almond flour
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1/4 cup chopped fresh basil
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh oregano (or 1 tablespoon dried oregano)
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup marinara sauce (look for one with no added sugars)
- For the Topping:
- 1/2 cup marinara sauce
- 1/2 cup shredded mozzarella cheese

- Instructions:
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the ground beef, ground Italian sausage, almond flour, Parmesan cheese, eggs, basil, parsley, oregano, garlic, salt, and black pepper. Mix everything together until well combined.
- Take a 9×5-inch loaf pan and line it with parchment paper, leaving some overhang on the sides for easy removal.
- Place half of the meat mixture into the prepared loaf pan and press it down evenly to form the bottom layer.
- Spread 1/2 cup of marinara sauce over the bottom meat layer.
- Add the remaining meat mixture on top of the sauce, pressing it down to form the top layer.
- Spread another 1/2 cup of marinara sauce on top of the meatloaf.
- Bake in the preheated oven for about 45 minutes.
- Remove the meatloaf from the oven and sprinkle the shredded mozzarella cheese over the top.
- Return the meatloaf to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly and the internal temperature of the meatloaf reaches 160°F (71°C).
- Let the meatloaf rest for a few minutes before slicing and serving.
