Ingredients
•2 chicken breasts, cut into 1-inch pieces
•3/4 cup yellow onion, chopped
•1 small zucchini, chopped
•1 1/2 cups multicolored bell peppers, chopped
•1 cup broccoli florets
•1 cup tomatoes, chopped
•2 tablespoons of olive oil
•1/2 teaspoon paprika
•2 teaspoons Italian seasoning
•1/2 teaspoon of salt
•1/2 teaspoon black pepper

  1. Preheat the oven to 400°F (200°C) and spray a rimmed baking sheet with nonstick spray or line it with parchment paper.
  2. Place the chicken pieces on the prepared baking sheet and spread them out evenly.
  3. Place the onion, zucchini, bell peppers, broccoli, and tomatoes on the same baking sheet, filling in the gaps between the chicken pieces.
  4. Drizzle the olive oil over the chicken and vegetables and sprinkle with the paprika, Italian seasoning, salt, and pepper. Toss everything to coat well with the oil and seasonings.
  5. Bake for 25 to 30 minutes or until the chicken is cooked through and the vegetables are tender.
