Creamy Keto Chicken with Broccoli and Cauliflower Bake

Ingredients:

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • Optional: additional seasonings like garlic powder, paprika, or Italian seasoning

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, melt the butter over medium heat. Season the chicken breast pieces with salt and pepper, and then add them to the skillet. Cook until the chicken is browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, pour in the heavy cream. Bring it to a gentle boil over medium heat, stirring occasionally. Allow the cream to simmer until it starts to thicken slightly, about 5-7 minutes.
  4. While the cream is simmering, bring a pot of salted water to a boil. Add the broccoli and cauliflower florets to the boiling water and cook for about 3-4 minutes, until they are just tender. Drain the vegetables and set them aside.
  5. Once the cream has thickened slightly, add the cooked chicken back into the skillet. Stir to coat the chicken pieces in the creamy sauce. Let it simmer together for another 2-3 minutes, allowing the flavors to meld.
