Ingredients:

  • 2 cups almond flour
  • 3 eggs
  • 2 tsp vanilla extract
  • 1/2 tsp sea salt
  • 1 cup sour cream
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 2 tsp your sweetener of choice (like erythritol or stevia)
  • 1/2 cup Lily’s chocolate chips (sugar-free)

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the tin with butter or oil to prevent sticking.
  2. In a large mixing bowl, combine the almond flour, sea salt, cinnamon, and baking soda. Mix well to ensure the dry ingredients are evenly distributed.
  3. In another bowl, beat the eggs until they are well mixed and slightly frothy. Add the vanilla extract and sweetener of your choice to the beaten eggs. Mix until well combined.
  4. Pour the wet ingredients (egg mixture) into the dry ingredients (almond flour mixture). Stir until just combined. Avoid overmixing as it can lead to denser muffins.
