Keto Cinnamon Rolls

Ingredients: For the dough:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup granulated erythritol (or any keto-friendly sweetener)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract

For the filling:

  • 1/4 cup unsalted butter, softened
  • 2 tbsp ground cinnamon
  • 2 tbsp granulated erythritol (or any keto-friendly sweetener)

For the cream cheese frosting:

  • 4 oz cream cheese, softened
  • 2 tbsp unsalted butter, softened
  • 1/4 cup powdered erythritol (or any keto-friendly powdered sweetener)
  • 1 tsp vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together almond flour, coconut flour, granulated erythritol, baking powder, and salt.
  3. Add the eggs, melted butter, and vanilla extract to the dry ingredients. Mix until well combined, forming a dough.
  4. Place the dough between two pieces of parchment paper and roll it out into a rectangular shape, about 1/4 inch thick.
  5. In a separate bowl, mix together softened butter, ground cinnamon, and granulated erythritol to create the filling.
  6. Spread the cinnamon filling evenly over the rolled-out dough.
  7. Carefully roll the dough lengthwise, creating a log shape.
  8. Slice the log into approximately 1-inch thick cinnamon rolls.
  9. Place the cinnamon rolls on the prepared baking sheet and bake in the preheated oven for 15-18 minutes, or until they are lightly golden.
  10. While the cinnamon rolls are baking, prepare the cream cheese frosting. In a bowl, mix together softened cream cheese, softened butter, powdered erythritol, and vanilla extract until smooth and creamy.
  11. Once the cinnamon rolls are done baking, let them cool slightly before spreading the cream cheese frosting over them.
