Keto Cinnamon Rolls
Ingredients: For the dough:
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup granulated erythritol (or any keto-friendly sweetener)
- 1 tsp baking powder
- 1/4 tsp salt
- 3 large eggs
- 1/4 cup unsalted butter, melted

For the cream cheese frosting:
- 4 oz cream cheese, softened
- 2 tbsp unsalted butter, softened
- 1/4 cup powdered erythritol (or any keto-friendly powdered sweetener)
- 1 tsp vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together almond flour, coconut flour, granulated erythritol, baking powder, and salt.
- Add the eggs, melted butter, and vanilla extract to the dry ingredients. Mix until well combined, forming a dough.
- Place the dough between two pieces of parchment paper and roll it out into a rectangular shape, about 1/4 inch thick.
- In a separate bowl, mix together softened butter, ground cinnamon, and granulated erythritol to create the filling.
- Spread the cinnamon filling evenly over the rolled-out dough.
- Carefully roll the dough lengthwise, creating a log shape.
- Slice the log into approximately 1-inch thick cinnamon rolls.
- Place the cinnamon rolls on the prepared baking sheet and bake in the preheated oven for 15-18 minutes, or until they are lightly golden.
- While the cinnamon rolls are baking, prepare the cream cheese frosting. In a bowl, mix together softened cream cheese, softened butter, powdered erythritol, and vanilla extract until smooth and creamy.
- Once the cinnamon rolls are done baking, let them cool slightly before spreading the cream cheese frosting over them.
