KETO CREAM CHEESE CHICKEN TACOS

Ingredients:

For the Cream Cheese Chicken Filling:

  • 2 cups cooked and shredded chicken (rotisserie chicken works well)

  • 1/4 cup heavy cream
  • 1/4 cup chicken broth
  • 1 teaspoon chili powder

  • Salt and pepper to taste

For the Tacos:

  • Large lettuce leaves (such as iceberg or Romaine) or low-carb tortillas
  • Sliced avocado
  • Shredded lettuce
  • Diced tomatoes
  • Shredded cheddar cheese
  • Sour cream
  • Chopped cilantro (optional)
  • Lime wedges for serving

Instructions:

  1. In a skillet over medium heat, combine the softened cream cheese, heavy cream, and chicken broth. Whisk until the mixture is smooth and well combined.
  2. Add the shredded chicken to the skillet and stir to coat it with the cream cheese mixture.
  3. Sprinkle in the chili powder, cumin, garlic powder, salt, and pepper. Continue to stir and cook until the chicken mixture is heated through and the flavors are well combined.
  4. Taste and adjust the seasoning as needed. If the mixture is too thick, you can add a little more chicken broth or heavy cream to reach your desired consistency.
  5. Prepare your taco toppings: Slice the avocado, shred the lettuce, dice the tomatoes, and set out the shredded cheese, sour cream, and chopped cilantro.
  6. To assemble the tacos, spoon the cream cheese chicken mixture onto large lettuce leaves or low-carb tortillas.
  7. Top the chicken with sliced avocado, shredded lettuce, diced tomatoes, shredded cheese, a dollop of sour cream, and a sprinkle of chopped cilantro.
  8. Squeeze a lime wedge over each taco for a burst of fresh citrus flavor.
