Cream Puff Chaffle
Ingredients:
- 2 eggs, room temperature
- 2 oz cream cheese, softened
- 1 tbsp coconut flour
- 1 tbsp Heavy Whipping Cream
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp Erythritol
Custard Filling:
- 1 box sugar-free vanilla pudding mix (any flavor you prefer)
- 2 cups Heavy Whipping Cream

Instructions:
- Prepare the custard filling by mixing the sugar-free vanilla pudding mix with heavy whipping cream. Beat well until smooth, then refrigerate until needed.
- Preheat your waffle maker or Chaffle maker.
- In a blender, combine the eggs, softened cream cheese, coconut flour, Heavy Whipping Cream, vanilla extract, baking powder, cinnamon, and Erythritol. Blend until smooth.
- Pour 1/4 of the batter into the preheated waffle maker or Chaffle maker. Cook for 5-6 minutes, or until golden brown and cooked through. Repeat with the remaining batter.
- Once the Chaffles are cooked, let them cool completely.
- Slice each Chaffle three-quarters of the way through, creating a pocket for the filling.
- Fill each Chaffle pocket with the prepared custard filling.
- Dust the filled Chaffles lightly with powdered Erythritol.
