Cream Puff Chaffle

Ingredients:

  • 2 eggs, room temperature
  • 2 oz cream cheese, softened
  • 1 tbsp coconut flour
  • 1 tbsp Heavy Whipping Cream
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp Erythritol

Custard Filling:

  • 1 box sugar-free vanilla pudding mix (any flavor you prefer)
  • 2 cups Heavy Whipping Cream

Instructions:

  1. Prepare the custard filling by mixing the sugar-free vanilla pudding mix with heavy whipping cream. Beat well until smooth, then refrigerate until needed.
  2. Preheat your waffle maker or Chaffle maker.
  3. In a blender, combine the eggs, softened cream cheese, coconut flour, Heavy Whipping Cream, vanilla extract, baking powder, cinnamon, and Erythritol. Blend until smooth.
  4. Pour 1/4 of the batter into the preheated waffle maker or Chaffle maker. Cook for 5-6 minutes, or until golden brown and cooked through. Repeat with the remaining batter.
  5. Once the Chaffles are cooked, let them cool completely.
  6. Slice each Chaffle three-quarters of the way through, creating a pocket for the filling.
  7. Fill each Chaffle pocket with the prepared custard filling.
  8. Dust the filled Chaffles lightly with powdered Erythritol.
