For the Crispy Baked Dill Cucumbers:

  • 2 large cucumbers, thinly sliced
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon dried dill
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 eggs, beaten

For the Ranch Dip:

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh chives
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a shallow dish, combine almond flour, grated Parmesan cheese, dried dill, garlic powder, onion powder, salt, and pepper. Mix well.
  3. Dip each cucumber slice into the beaten eggs, then coat it with the almond flour mixture. Make sure each slice is evenly coated.
