Ingredients:

For the cauliflower mash:

  • 1 large head of cauliflower, chopped into florets
  • 2 tablespoons butter
  • 1/4 cup heavy cream
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar cheese

For the ground beef and cream of mushroom bottom:

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1/2 cup beef broth
  • 1/4 cup heavy cream
  • Salt and pepper to taste

For assembling:

  • 1/2 cup shredded cheddar cheese

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Start by making the cauliflower mash. Steam or boil the cauliflower florets until they are tender, about 10-15 minutes. Drain the cauliflower well and transfer to a large mixing bowl.
  3. Add butter, heavy cream, salt, and pepper to the cauliflower. Mash everything together until smooth and creamy. Stir in the shredded cheddar cheese until well combined. Set aside.
  4. In a large skillet, heat olive oil over medium heat. Add diced onions and minced garlic, sauté until translucent and fragrant, about 2-3 minutes.
  5. Add ground beef to the skillet and cook until browned, breaking it apart with a spoon as it cooks.
  6. Once the beef is browned, add sliced mushrooms to the skillet. Cook until the mushrooms are soft and browned, about 5 minutes.
  7. Pour in beef broth and heavy cream. Stir well to combine. Let the mixture simmer until it thickens slightly, about 5-7 minutes. Season with salt and pepper to taste.
  8. Transfer the ground beef and mushroom mixture to a baking dish, spreading it out evenly.
  9. Spread the cauliflower mash over the top of the beef mixture, smoothing it out with a spatula.
  10. Sprinkle shredded cheddar cheese over the cauliflower mash layer.
  11. Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly, and the edges are golden brown.
  12. Once done, remove the Shepherd’s Pie from the oven and let it cool for a few minutes before serving.
