Instructions:
- Preheat your oven to 375°F (190°C).
- Start by making the cauliflower mash. Steam or boil the cauliflower florets until they are tender, about 10-15 minutes. Drain the cauliflower well and transfer to a large mixing bowl.
- Add butter, heavy cream, salt, and pepper to the cauliflower. Mash everything together until smooth and creamy. Stir in the shredded cheddar cheese until well combined. Set aside.
- In a large skillet, heat olive oil over medium heat. Add diced onions and minced garlic, sauté until translucent and fragrant, about 2-3 minutes.
- Add ground beef to the skillet and cook until browned, breaking it apart with a spoon as it cooks.
- Once the beef is browned, add sliced mushrooms to the skillet. Cook until the mushrooms are soft and browned, about 5 minutes.
- Pour in beef broth and heavy cream. Stir well to combine. Let the mixture simmer until it thickens slightly, about 5-7 minutes. Season with salt and pepper to taste.
- Transfer the ground beef and mushroom mixture to a baking dish, spreading it out evenly.
- Spread the cauliflower mash over the top of the beef mixture, smoothing it out with a spatula.
- Sprinkle shredded cheddar cheese over the cauliflower mash layer.
- Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly, and the edges are golden brown.
- Once done, remove the Shepherd’s Pie from the oven and let it cool for a few minutes before serving.
- Serve hot and enjoy your Keto-friendly Shepherd’s Pie with cauliflower mash and cheese on top
