- 1 teaspoon vanilla extract
- 1/2 cup sugar-free dark chocolate chips or chopped dark chocolate (at least 85% cocoa)
- 1 tablespoon coconut oil (for chocolate coating)

Instructions:
- In a mixing bowl, combine the shredded unsweetened coconut, melted coconut oil, powdered erythritol, and vanilla extract. Mix well until everything is evenly combined.
- Line a small baking dish or tray with parchment paper. Transfer the coconut mixture into the lined dish and press it down firmly to form an even layer. Place the dish in the freezer for about 30 minutes to firm up.
