Here’s a detailed recipe for Keto Hot Pockets:

Ingredients:

For the filling:

  • Shaved sandwich meat of your choice (e.g., turkey, ham)
  • Shredded cheese of your choice (e.g., cheddar)

For the dough:

  • 1 1/2 cups shredded mozzarella cheese
  • 1 1/2 cups shredded cheddar cheese
  • 4 oz cream cheese
  • 2 beaten eggs
  • 1 1/2 cups almond flour
  • 2 tsp xanthan gum
  • 2 tbsp everything bagel seasoning

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Prepare your filling ingredients by selecting your preferred shaved sandwich meat and shredding the cheese.
  3. In a microwave-safe bowl, combine the shredded mozzarella cheese, shredded cheddar cheese, and cream cheese. Microwave in 30-second intervals, stirring in between, until the cheeses are melted and well combined.
  4. Once the cheese mixture is melted, add the beaten eggs, almond flour, xanthan gum, and everything bagel seasoning. Mix until a dough forms. You may need to knead the dough with your hands to fully incorporate all the ingredients.
  5. Divide the dough into equal portions, depending on how many hot pockets you want to make.
  6. Roll out each portion of dough into a rectangle shape on a piece of parchment paper. The dough should be thin but not too thin that it tears easily.
  7. Place a portion of your chosen shaved sandwich meat and shredded cheese onto one half of each dough rectangle, leaving some space around the edges.
  8. Fold the other half of the dough over the filling to create a pocket. Use your fingers to press the edges firmly together to seal the pocket.
  9. Transfer the assembled hot pockets onto a baking sheet lined with parchment paper.
  10. Bake in the preheated oven for about 15-20 minutes, or until the hot pockets are golden brown and cooked through.
  11. Once baked, remove the hot pockets from the oven and let them cool for a few minutes before serving.
