Keto Pepperoni Pizza Quesadilla

This keto recipe provides all the flavors of a classic pizza but without the high carb content, making it a perfect low-carb alternative.

Ingredients:

  • 1 low-carb tortilla (choose a keto-friendly brand)
  • 1 tsp light olive oil
  • 2 tsp sugar-free pizza sauce (no added sugar)
  • 1/4 cup shredded mozzarella cheese (part-skim)
  • 6-8 slices of pepperoni (look for sugar-free and nitrate-free options)
  • 1 tsp grated Parmesan cheese
  • 1/2 tsp Italian seasoning

Instructions:

  1. Heat a frying pan over medium heat and add a small drizzle of light olive oil.
  2. Place the low-carb tortilla in the pan, spreading it around to ensure it’s evenly coated with the oil. Cook it for about 1-2 minutes until it starts to become slightly crisp.
  3. Flip the tortilla over, and on the cooked side, smear 2 teaspoons of sugar-free pizza sauce.
  4. Sprinkle the shredded mozzarella cheese evenly over the sauce.
  5. Arrange the pepperoni slices on top of the cheese.
  6. Sprinkle grated Parmesan cheese and Italian seasoning over the pepperoni.
  7. Cover the pan with a lid and continue to cook for 3-5 minutes on medium heat, or until the cheese is melted, and the tortilla is crispy.
  8. Carefully fold the tortilla in half, creating a half-moon shape.
  9. Remove from the pan, let it cool for a minute, then slice it into wedges.
