Instructions:
- Preheat your oven to 400°F (200°C).
- Place the cauliflower florets in a pot, cover with water, and bring to a boil over medium-high heat. Cook until the florets are fork-tender, about 8 to 10 minutes. Drain the cauliflower well and season with salt and pepper. Mash the cauliflower until smooth using a potato masher. Set aside.
- In a skillet, melt the cooking fat over medium heat. Add the diced onion, celery, and minced garlic. Cook for 2 to 4 minutes, stirring often, until the vegetables are softened.
- Add the ground beef or lamb to the skillet and cook until browned, breaking it apart with a spoon as it cooks, about 4 to 5 minutes.
- Once the meat is browned, add the chopped mushrooms to the skillet and continue cooking until the mushrooms are soft.
- Pour in the beef stock and season the mixture with salt and pepper to taste. Allow it to simmer for an additional 4 to 5 minutes until the flavors meld together.
- Transfer the beef and vegetable mixture to a casserole dish, spreading it out evenly.
- Spoon the mashed cauliflower over the meat mixture in the casserole dish, spreading it out evenly to cover the surface.
- Sprinkle the grated mozzarella cheese over the top of the mashed cauliflower.
- Place the casserole dish in the preheated oven and bake for 15 to 20 minutes, or until the mashed cauliflower is nicely browned and the cheese is melted and bubbly.
- Once done, remove the Shepherd’s Pie from the oven and garnish with minced fresh parsley before serving.
