Here’s a detailed recipe for Keto Shepherd’s Pie with mashed cauliflower:

Ingredients:

  • 500g ground beef or lamb
  • 1 head cauliflower, chopped into florets
  • 1 onion, diced
  • 2 celery stalks, diced
  • 1 cup mushrooms, chopped
  • 2 garlic cloves, minced
  • 1/2 cup beef stock
  • Fresh parsley, minced (to garnish)
  • 4 tbsp cooking fat (such as butter, ghee, or coconut oil)
  • 1 cup grated mozzarella cheese
  • Sea salt and freshly ground black pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Place the cauliflower florets in a pot, cover with water, and bring to a boil over medium-high heat. Cook until the florets are fork-tender, about 8 to 10 minutes. Drain the cauliflower well and season with salt and pepper. Mash the cauliflower until smooth using a potato masher. Set aside.
  3. In a skillet, melt the cooking fat over medium heat. Add the diced onion, celery, and minced garlic. Cook for 2 to 4 minutes, stirring often, until the vegetables are softened.
  4. Add the ground beef or lamb to the skillet and cook until browned, breaking it apart with a spoon as it cooks, about 4 to 5 minutes.
  5. Once the meat is browned, add the chopped mushrooms to the skillet and continue cooking until the mushrooms are soft.
  6. Pour in the beef stock and season the mixture with salt and pepper to taste. Allow it to simmer for an additional 4 to 5 minutes until the flavors meld together.
  7. Transfer the beef and vegetable mixture to a casserole dish, spreading it out evenly.
  8. Spoon the mashed cauliflower over the meat mixture in the casserole dish, spreading it out evenly to cover the surface.
  9. Sprinkle the grated mozzarella cheese over the top of the mashed cauliflower.
  10. Place the casserole dish in the preheated oven and bake for 15 to 20 minutes, or until the mashed cauliflower is nicely browned and the cheese is melted and bubbly.
  11. Once done, remove the Shepherd’s Pie from the oven and garnish with minced fresh parsley before serving.
