Keto Turtle Cheesecake Recipe:
Chocolate Crust:
- Preheat the oven to 350°F (175°C) and prepare a springform pan by greasing it.
- In a mixing bowl, combine almond flour, unsweetened dark cocoa powder, coconut flour, powdered erythritol, liquid stevia, and salt.
- Pour in the melted unsalted butter and mix until the ingredients are well combined and form a dough-like consistency.
- Press the dough evenly into the bottom of the prepared springform pan to form the crust.
- Bake the crust in the preheated oven for 10-12 minutes until set. Remove from the oven and let it cool while preparing the cheesecake filling.

Cheesecake Filling:
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
- Add sour cream, lemon juice, powdered erythritol, and liquid stevia to the cream cheese, and beat until well combined.
- Add eggs one at a time, mixing well after each addition until the mixture is smooth and creamy.
- Pour the cheesecake filling over the cooled chocolate crust in the springform pan.
- Smooth the top with a spatula to ensure an even layer.
- Bake the cheesecake in the preheated oven for 45-50 minutes, or until the edges are set but the center still jiggles slightly.
- Remove the cheesecake from the oven and let it cool completely at room temperature. Then, refrigerate for at least 4 hours or overnight to set.
