Keto Fudge Cheesecake Recipe:

Ingredients:

  • 1 stick of salted butter
  • 2 oz. of unsweetened dark chocolate chunks (such as Hershey’s)
  • 1 tablespoon vanilla extract
  • 1 8 oz. package cream cheese, softened
  • 1/2 cup sweetener or sugar replacement of your choice (adjust to taste)

Instructions:

  1. In a pot, melt the stick of butter over low heat.
  2. Once the butter is melted, add the unsweetened dark chocolate chunks to the pot.
  3. Stir continuously until the chocolate is completely melted and well combined with the butter.
  4. Remove the pot from heat and stir in the vanilla extract and sweetener/sugar replacement. Adjust the sweetness according to your preference.
  5. In a separate mixing bowl, add the softened cream cheese.
  6. Using a mixer or food processor, gradually add the chocolate mixture to the cream cheese, blending until smooth and creamy.
  7. Taste the mixture and adjust the sweetness or chocolate flavor if desired.
  8. Transfer the mixture into a container suitable for freezing.
  9. Cover the container and place it in the freezer to set for at least 2-3 hours or until firm.
  10. Once set, remove the keto fudge cheesecake from the freezer and allow it to thaw slightly before serving.
  11. Serve chilled and enjoy this super simple, super tasty keto dessert that tastes just like creamy chocolate pudding
