Zucchini Fries Recipe:

Ingredients:

  • 2 medium zucchinis
  • 1/2 cup Carbquick
  • 2 eggs, beaten
  • Parmesan cheese (freshly grated or sprinkle kind)
  • Seasonings to taste (such as spicy seasoning salt and garlic powder)
  • Oil for frying

Instructions:

  1. Preheat your oven to the convection setting if planning to crisp the fries after frying.
  2. Wash and dry the zucchinis. Cut them into “fries” shape, resembling traditional French fries.
  3. In a shallow bowl, whisk the eggs until well beaten.
  4. In another shallow bowl, mix Carbquick with your preferred seasonings to taste.
  5. Dip each zucchini fry into the beaten eggs, ensuring it’s well coated.
  6. Roll the egg-coated zucchini fries in the seasoned Carbquick mixture, ensuring they’re evenly coated.
  7. Dip the coated fries back into the egg mixture for a second coating.
  8. Roll the double-coated fries in Parmesan cheese, covering them evenly.
  9. Heat oil in a frying pan over medium-high heat. Once the oil is hot, carefully place the coated zucchini fries into the oil, working in batches to avoid overcrowding the pan.
  10. Fry the zucchini fries until they are golden brown and crispy on all sides, turning them occasionally for even cooking. This should take about 3-4 minutes per batch.
  11. Once cooked, remove the fries from the oil and place them on a paper towel-lined plate to drain any excess oil.
  12. If desired, transfer the fried zucchini fries to a baking sheet and place them in the preheated oven under the convection setting for a few minutes to crisp up even more.
