Ingredients:
- 4 cups cauliflower rice
- 2 cups unsweetened almond milk or coconut milk
- 1/4 cup heavy cream
- 1/4 cup erythritol or your preferred keto-friendly sweetener
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp nutmeg
- 2 large eggs
- 1/4 cup unsweetened shredded coconut (optional)
- 1/4 cup chopped pecans or walnuts (optional)
- Pinch of salt
- Start by steaming or microwaving the cauliflower rice until it’s soft but not mushy. Drain any excess water and set it aside.
- In a saucepan, heat the almond milk and heavy cream over medium heat until it starts to simmer. Be careful not to boil it.
- In a separate bowl, whisk the eggs, erythritol (or your chosen sweetener), vanilla extract, cinnamon, nutmeg, and a pinch of salt.
- Slowly pour the hot milk mixture into the egg mixture, whisking continuously to prevent the eggs from scrambling.
- Return the combined mixture to the saucepan and continue to cook over low heat, stirring constantly, until it thickens. This should take about 5-7 minutes.
- Remove the saucepan from heat and stir in the steamed cauliflower rice. Add the shredded coconut and chopped nuts if desired.
- Let the pudding cool for a few minutes before serving. You can serve it warm or chilled, depending on your preference.
- Before serving, you can sprinkle a little extra cinnamon or nutmeg on top for extra flavor and presentation.
