I was playing around with a recipe I found with what I had on hand and I swear these taste like oatmeal cookies. They’re not super high in fat compared to other recipes, but they’re so good.
1/4 C butter, room temp
1/4 C coconut oil, melted
3 TBS Erythritol or other keto friendly sweetener (granulated)
2 tsp vanilla extract
Grind pecans in food processor until crumb sized.
Add all other ingredients and puree until smooth and a paste forms.
Spoon into ice tray or mold and freeze for thirty minutes.
Keep refrigerated. They will get soft at room temperature.
